GREAT CANADIAN BUTTER TARTS
(Makes about 20 regular sized, or 40 mini sized tarts)

Ingredients |

1/2 cup Melted Butter
2/3 cup Brown Sugar (light or dark)
2/3 cup Corn Syrup (light or dark) |
1/4 tsp. Salt
2 Eggs (slightly beaten)
3/4 cup Raisins or Currants |
In a bowl, combine
ingredients.
Pour mixture into pre-baked tart shells arranged
on a cookie sheet lined with a Cooks Co. baking mat. Bake for 10 - 12 minutes at 375. Easy clean
up-just wipe baked on overflow off Cooks Co. baking mat
with a paper towel! |
BEST BANANA BREAD
(Makes one loaf, but recipe can be multiplied as much as
you like!)

Ingredients |

Dry Ingredients
1 1/2 cups All Purpose Flour
( can use whole wheat instead)
1 cup Sugar
1/4 tsp. Salt
1 1/2 tsp. Baking Soda |
Wet Ingredients
3 Ripe Bananas (mashed)
1/2 cup Melted Butter
(for low fat version: use 1 cup
Unsweetened Apple Sauce and 1/8 cup of Vegetable Oil)
2 Eggs, slightly beaten |
Mix wet and dry ingredients in separate
bowls (be careful butter is not hot, or the eggs will cook).
Mix dry ingredients into wet ingredients just until blended. Pour batter into loaf pan lined
with Cooks Co. baking mat. Bake
for 1 hour at 350.
For low fat version:
Bake 15 minutes longer, and store in refrigerator to preserve. |
LOW FAT FRENCH FRIES
(Taste as good as the real thing!)

2 Large Potatoes
(cut into wedges 1/2" thick)
2 teaspoons of Oil (any type)
1/4 tsp. Black Pepper |
1/4 tsp. Sea Salt
1/4 tsp. Paprika
1/4 tsp. Cayenne Pepper
1/4 tsp. Garlic Powder |

Toss all ingredients in a large bowl to ensure
all fries are coated with oil and spices. Place potatoes on a cookie
sheet lined with a Cooks Co. baking mat. Bake for 40 minutes at 400. After about 20 minutes, shake pan to redistribute fries to
ensure even browning.
If you prefer your fries thinner, cut wedges to
1/4" and decrease cooking time to 30 minutes. |
